Germana's codfish
Ingredients for two persons
Eight cod fillets (also frozen ones)
half white onion
one garlic clove
some parsley
two coffee-spoons of chopped capers
half glass of local "extravergine" olive oil
white and red chili pepper
some salt
one coffee-spoon of flour
half cup of vegetrable broth
two anchovies breaked into small pieces
one fistful of local olives
two local lemons
one glass of dry white wine
Preparation
In the olive oil brown slightly onion, garlic and parsley already chopped;
add the cod fillets, and let all brown for ten minutes, turning the fillets every so often;
add capers, anchovies, a little salt and then white and red chili pepper, as much as you like;
use the broth to avoid burning, and the flour to amalgamate the ingredients;
after five minutes of gentle cooking, add the wine, the olives, and cook for five minutes more;
add the juice of one lemon, and cook till it will be well absorbed;
add directly in the frying pan the second lemon, cut in segments.
